Heat 2 tablespoons of olive oil in a saucepan, add the onion, celery and leek and cook over a medium heat for 5 minutes, until they turn translucent. Add the garlic, stir for 1 minute, then pour in the wine and let it bubble away for a couple of minutes. Throw in the cavolo nero, mangetout, the unmashed cannellini beans, the stock and nutmeg, then bring to the boil and simmer for 3 minutes. Stir in the peas and the mashed cannellini beans and cook for a further minute, reduce the heat to low and add the ricotta, chives, lemon zest and juice and seasoning. Sprinkle in the grated Parmesan, if using, and taste to check the seasoning. Serve immediately with the remaining extra virgin olive oil drizzled over the top.
